Sliced Fresh Mozzarella – We made our Award Winning Fresh Mozzarella even easier for you to use. Cappiello Takes Gourmet Mozzarella to New Heights:
It’s Not Just for Pizza Anymore

Mozzarella is the #1 cheese in America in terms of sales, although the average consumer may not be aware of the fact.

Most mozzarella cheese goes on top of pizzas, cutlets or tacos, or other manufactured products, and often goes unnoticed.

But in the mid-1990s, the Cappiello family – which has been making cheese in Schenectady, N.Y. since 1921 – felt that the market was right for a high-end, hand-braided mozzarella cheese in flavors like dried tomato-basil, smoked and marinated.

The hunch paid off, and today Cappiello specialty mozzarella can be found across the country in high-end supermarkets and gourmet stores like Safeway, Jewel Dominics, ShopRite, Schnucks, Meijer and Kroger as well as national retailers like Costco, Wal-Mart and Sam’s Club.

Cappiello’s distribution continues to grow throughout the country and its entry into new and larger markets is reflective of an increase in demand for gourmet Italian cheese. International contracts are also being negotiated.

“We’re very happy with the reception our specialty, hand-braided mozzarella cheese has received,” Cappiello said.

Newer and Different Gourmet Italian Cheeses
Next in line for expanded distribution is Cappiello’s scamorze, a blend of mozzarella and provolone, which is aged 90 days or more to achieve maximum flavor. Cappiello will be reducing the size of its scamorze from 14 oz. to 10oz. to expand its appeal, especially for those who are new to the product.

“Scamorze is a personal favorite of mine,” Cappiello says, “and I think it offers a number of promising opportunities in terms of marketing and packaging, and we’re now trying to offer it at retail at a more affordable price to consumers.”

“Who knows, flavored scamorze varieties may coming down the road,” she added.

Expansion at Schenectady, NY plant
As expanded distribution continues nationally, Cappiello is also expanding its Schenectady, NY plant, adding new milk silos, new package and production machinery and other physical improvements to the plant. The upgrades are expected to increase efficiency by 50 percent and production by 75 percent.
While growth is focused on the gourmet cheeses, Cappiello Dairy continues to produce over 4.2 million pounds of ricotta and 1.5 million pounds of mozzarella cheese each year.
“You could say our traditional mozzarella and ricotta are still our bread and butter,” Cappiello said. “We’re very satisfied that we maintained our highest quality standards despite competition from the national brands.”

‘Pride of New York’
Cappiello works with a number of marketing programs to promote the product.
“We’ve worked successfully with the State of New York’s ‘Pride of New York’ program to promote the state’s agricultural products, and we’re also indebted to our regional retailers like Price Chopper who have supported our products over the years,” Cappiello said.
“Cappiello’s goal is to become one of the top five brand names in the specialty market,” she said.

Scientists believe that the key contributor to dairy’s superior effect may be its unique mix of nutrients, including calcium and protein, which may help the body break down and burn fat.

The American Dairy association launched a national campaign supporting the exciting news
